Ok, I love cooking but hate cooking in the summer. It is entirely too hot to be cooking in the kitchen which is why I love my crock pot. I got one for Christmas last year and I have been addicted ever since. The flavors from the meat, veggies, cheese, etc. taste so much better when it simmers all day.
Throw it in the pot and forget about it

I love a good meatloaf however having the oven on during the entire process in the summer is not something I want to do. So when I saw this recipe where I can make meatloaf in a CROCKPOT, I knew I had to attempt to make it.
Things I changed: I used sugar free ketchup and mid way through dumped the oil and put it back on the cooker to finish simmering. I also did not line it with foil and it still came out perfectly fine. I did not use any milk, to hold I used bread crumbs and about 2-3 eggs.
I love peach cobbler, it's probably one of my favorite summer desserts. I like this recipe because it's so simple and still tastes like traditional peach cobbler. This recipe has only 3 ingredients: cake mix, peaches and butter. Add it with some vanilla or butter pecan ice cream and it is delicious.
Things I changed: I use sugar free cake mix and peaches in light syrup. I also only use half the cake mix because I don't like the breading so thick.
Pulled chicken and pork mixed in with your favorite BBQ sauce is a good summer meal because you can use the meat for various things ad make enough to last a week. You can make burgers, tacos. I eat it on the side with a salad or my kids it eat with corn.
Things I change: I use sugar free BBQ sauce (any brand is fine but I personally use G Hughes) and you can also by the chicken pulled/shredded already if you choose not to use chicken breast.
One of my favorite things to make because you can add so many things to this. I made this for a party at my house and everyone loved it. I added in spinach and broccoli because I like adding in more vegetables for flavor. Broccoli in the crockpot vs the stove are two very different tastes, trust me!
Things I changed: I use the Velveeta cheese in the jar vs the one used on Mom Foodie . Their block cheese has a weird taste to me and doesn't melt to the consistence I like.
Beef short ribs is something my grandma still makes till this day and they are so damn good. She makes her in the oven which is a killer because the oven will have to sit on for a couple hours. I eat this with a salad if I don't want a heavy meal by adding mashed potatoes or you can use mashed cauliflower. The juices from the ribs mixed with the mashed cauliflower are so damn good!
Things I changed: I do not use red wine or vinegar.
My go to crockpot meal that I cannot live without. I eat this with pork skins (if you're keto), low carb tortillas that I make chips out of, or I put it on top of chicken breasts. So many options on how to eat this and I make enough to last for about a week. I add in broccoli and may add in red pepper flakes if I want some heat.
Things I changed: I use almond milk and add it depending on how creamy I want the dip.
